- Llevamos a ebullición y dejamos cocer a fuego medio durante unos 25' a 30' o hasta que la patata esté blandita. Recitificamos de sal y pimienta.

- Cuando está tierna la patata, retiramos parte del caldo, añadimos los quesitos un chorro generoso de aceite de oliva y trituramos con la batidora, añadiremos caldo hasta obtener la textura deseada.
